Title: Caribbean Prawn, Green Mango, And Potato Curry

1tsTumeric
1tsGaram masala
1tsCumin
1tsCoriander
1/2tsChilli powder
3 Curry leaves (optional)
2tbGhee or margarine
1lgOnion, finely chopped
2 Cloves of garlic, crushed
1tsGinger
4 Tomatoes, peeled & chopped
3/4ptWater or stock
8ozPotato peeled & cubed
1tbBrown sugar
1smGreen mango peeled & sliced
  Salt
1 1/2lbPrawns, peeled

Mix all the spices in a little hot water or stock to form a paste.

Cook onions, ginger, and garlic in ghee until soft.

Add the masala and cook for 5 mins, stirring.

Add the tomatoes and stir well. Slowly add the water or stock, stirring, then the potatoes.

Cook on a moderate heat for 20 mins, then add the sugar, mango, salt, and prawns.

Cook for 10 - 15 mins longer then serve with rice and a cucumber and tomato salad.
